Thumbprint Cookies

Makes 2 1/2 dozen cookies
about 1/2 c Smucker's (or other brand) preserves or jams
1 c butter
1/4 c sugar
1 tsp almond extract
2 c all-purpose flour
1/2 tsp salt
1 c finely chopped nuts, optional
- Combine butter & sugar; beat until light & fluffy. Blend in almond extract. Add flour & salt; mix well.
- Shape level tablespoons of dough into balls; roll in nuts. Place on ungreased cookie sheets; flatten slightly. Indent centres; fill with 1 scant teaspoon jam.
- Bake @ 400 for 10-15 mins. or just until lightly browned.
Pika pika Puppy Chow (for people)

1 stick margarine or butter
1 c choc chips
1 box Crispix cereal
2 c powdered sugar
1 c peanut butter
Melt margarine or butter together with choc chips & peanut butter. Pour over cereal & stir to coat; spread out on cookie sheet to cool. Put powdered sugar in a paper bag; put mixture in bag & shake to coat. Store in a container.
Neiman Marcus Cookies

(Recipe may be halved)
2 c butter
4 c flour
2 tsp soda
2 c sugar
5 c blended oatmeal
24 oz. choc chips
2 c brown sugar
1 tsp salt
1 8 oz. Hershey Bar (grated)
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 c chopped nuts (your choice)
Measure oatmeal & blend in a blender to a fine powder. Cream the butter & both sugars. Add eggs & vanilla, mix together with flour, oatmeal, salt, baking powder & soda. Add choc chips, Hershey bar & nuts. Roll into balls & place 2 inches apart on a cookie sheet. Bake for 10 mins. @ 375 degrees. Makes 112 cookies. Have fun!
Sweet Tooth Cookies

1 c butter
1 c sugar
1 egg
2 tsp vanilla
2 c flour
crushed candy
Cream butter & sugar. Add egg, vanilla & flour. Chill dough for 30 mins. Roll dough & use cookie cutters to form into desired shapes. Place on ungreased cookie sheet & bake @ 350 degrees for 10-12 mins. Sprinkle candy on cookies right when they come out of the oven. Carefully remove cookies from sheet.
Oatmeal Cookies

1 c butter
1 c sugar
2 eggs
1 3/4 c flour
1/2 c choc chips or 3 t cocoa
1 c oats
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
Cream butter, sugar, eggs & vanilla together. Add & mix in oats. Mix in the other dry ingredients. Refrigerate until chilled (several hrs.) Create walnut sized balls & place them on an ungreased cookie sheet. Press each ball flat with a sugared glass. Cook 10-12 mins. @ 375 degrees in oven.
No Need to Knead Corn Bread

1 1/4 c flour
5 tsp baking powder
1 egg
2 tb melted butter
3/4 c whole-grain cornmeal (stone-ground if possible)
4 tb sugar
1 tsp salt
1 c milk
Mix together all the dry ingredients. Beat the egg w/ the milk & add it to the flour mixture along w/ the melted butter. Stir everything up well. Spread the batter in a buttered 9" pie dish & bake in a preheated 375 degree oven for 30-35 mins. or until slightly browned around the edges. Serve hot w/ butter. Serves 4-6 generously. (The bread comes out very yellow- lots of fun)
Microwave Apple Crisp

(1 serving)
1 or 2 medium apples
1 tb margarine
2 tb brown sugar
2 tb quick oats
2 tb flour
1/8 tsp cinnamon
Melt margarine; add sugar, oats & flour. Sprinkle over sliced apples in microwave-safe dish. Microwave on high 2 1/2 mins. Rotate dish & cook until apples test done.
Sorbet

4 c frozen fruit (strawberries, raspberries)
1 box Jello (85g)
4 c water (1 hot)
3/4 c sugar
1 can frozen juice
- Blend 4 c fruit, 3/4 c sugar & 1 c water.
- Prepare Jello (do not refrigerate).
- Blend Jello & 1 can juice w/ 1 c water.
- Mix all together.
- Freeze to a slush.
- Take out of freezer & enjoy!
Mango Jello

2 mangoes, sliced
2 c evaporated milk/homo milk
whipped cream (optional)
1 pkg peach jello
1 pkg pineapple jello
Dissolve jello in 2 c boiling water & leave to cool. Add milk to the cooled jello mixture & mix well. Add sliced mangoes into jello mixture & chill until firm. Serve w/ whipped cream.

2 c flour
1 1/2 c powdered milk
1 c sugar
3/4 c butter
Brown flour until golden. Remove from stove. Add melted butter. Add milk & sugar; add flavouring -> Vanilla = yummy!!!
